Sweet Sticky Rice with Mango
Heavenly is the only way to describe the classic Thai dessert khao niaow ma muang). It's the most famous of all Thai desserts, and so very delicious!😋 and here is my recipe for it... not too sweet, but just right!
🍚 500g of sticky rice 🥥 300g of coconut milk 😊 200g of white sugar (alternatively brown or palm sugar, but colour of your sweet sticky rice will comes out a bit brownish) 😁 10g of salt 😋 fresh mango
First, you need to wash & clean stick rice with water for 3-4 times untill the washed water is clear, not milky anymore. Then you soak sticky rice with water for at least 3 hours (☝️I normally leave it soak over night)
Step 2: Drain the rice and discard the water. Place the rice in the steamer basket and set over a pan of simmering water (☝️I use bamboo steamer and make sure to line your steamer basket with a piece of non-stick baking paper or very thin and fine cloth)
Cover the steamer and allow the rice to cook, undisturbed, for 25-30 minutes of until cooked through.
Step 3: Meanwhile, place the coconut milk, sugar and salt in a saucepan and gently heat over a medium heat. Stir until the sugar is completely dissolved but take care not to let it boil or it will take on a grainy consistency.
Step 4: Tip the cooked sticky rice into the pan with the coconut cream and stir to combine. Set aside the rice mix for 10 minutes to allow it to absorb the sweetened coconut cream.
Serve with fresh mango! and you can keep the leftover sticky rice in the refrigerator for another 3 days 😋😋😋
